1 package Trader Joes Steamed Fresh Lentils
1 can of Swanson’s Beef Broth
1 or 2 cans of water
2 bay leaves
1 onion peeled and cut in half
This recipe is ready as soon as it’s hot in the pot. However, the longer you simmer it, the softer the Lentils will get. Put the lentils in the pot and break them up with a spoon because they’re densely packed in the packaging. Pour in the can of broth. Fill the can with water and add that too. Put the onion half in and 2 bay leaves. If you think the lentils will need more water to get to the consistency of soup (versus the texture of a lentil side dish) then add water to your desire. Keep in mind that the lentils are already steamed from fresh and will not expand more like dried beans would.
This morning I made this before hopping in the shower. It was very quick and done when I got out of the shower. I also added about 1 cup or 2 of sliced mushrooms this morning and that worked out well.
