2 pieces fish (about 3 inches by 8 or 9 inches)
Ralph’s store brand blackened seasoning (about 3 teaspoons for the 2 pieces)
Olive oil (about a 1/4 cup)
Crushed garlic (about 1 -2 spoonfuls per fish)
Onion powder (generously)
Ground bay leaves (1/4 – 1/2 teaspoon)
Tatli Toz Biber (turkish ground sweet red pepper its milder than paprika. Genorously sprinkle))
Dried parsley (genously sprinkling helps the fish look “blacker”)
Marinate fish a day ahead.Coat tops and bottoms of the fish. Go easy on blackened seasoning because it can be too salty. I’m going to search for a blackened seasoning that doesn’t have any salt. That way I can load the spice and prevent it from being too salty. Also, I used a Turkish pepper instead of paprika because i think it tasted better than most paprika. But paprika is the spice that give a blackened seasoning mix it’s red color.
Preheat broiler to 400.
Cover pizza tray with aluminum foil. Place fish on top no cover. Broil uncovered and check with fork every two minutes. After about 6 mins turn the broiler up to max. Check every 2 mins for 2 to 4 more mins. Fish should be still very tender but hot and cooked all the way through.
